Everything But the Kitchen Sink Chili: Low in Fat not in Flavor

A low fat and low carb chili for everyone enjoy even if you are on a restricted diet. This is great just on its own, or topped on a potato, slathered all over some french fries, or over some corn chips. Most chili recipes call for some type of ground meat, beans, and tomato as the base ingredients. Here I have cut out most of the meat, leaving only a quarter pound of lean ground chicken. If you are a vegetarian, the meat can be completely omitted. The out come was a thick hearty chili that is spoon after spoon of comfort. I was good eating this in the 90+ degree LA weather, I just can’t wait to make this in the winter again.

Japanese Inspired Root Vegetable Stew

Finally a Japanese inspired dish. With my father’s recent health condition, my whole family have been forced to look for different low carb and low fat meals. After weeks of boiled broccoli, I have finally had it. While I was flipping though the cookbooks for some inspiration, I came across a recipe for a daikon and chicken stew. Instead of chicken, I made a substitution with fish cakes and then added a few extra variety of root vegetables. The meal was quick and easy. Hummus: Healthy and Delicious in 5 minuets

Hummus a delicious healthy creamy spread that can be eaten so many ways. I have always been a huge fan of hummus, but have never tried making my own until now. If you have never been tempted to try hummus before you should give it a try. This spread is made of mostly chick peas (or garbanzo beans if you prefer to call it) tahini (a sesame paste) and yogurt. Some recipes call for oil, but I rather omit that for a more fat free version.

Instead of dipping your veggie sticks into a tub of fatty ranch dressing try dipping it in hummus instead. You can use it in a sandwich in replace of mayo or in a wrap. Hummus can be used a dip for pretzels, crackers, tortilla chips, pita chips, pita bread, flat bread, and even sliced apples! Continue reading

Fiber your new best friend: Demystified

Food is food and delicious food is even better. But how do we know the difference between the friends and the foes? We all hear about fiber and how it is so wonderful for our health. Although the term fiber seems to get thrown around left and right and splattered all across cereal boxes, how many of us truly understand what fiber does? Really, not many of us really pay much attention the term fiber.

I was on a recent bad food binge lately, and after that I felt the urge to start a period of detoxing to feel less guilt about the binge. My research on fiber begins with understanding the physical properties, functions and sources of fiber. After defining fiber, my research lead into the comparison of fiber to is evil cousin sugar. The information I found helped clarify a lot about why fiber is said to be so beneficial for our health, but also how to be weary of the hidden evil cousin.
